Many people who are trying to eat healthier steer clear of eggs because they’re high in cholesterol. Cooking with egg whites is a great way to still enjoy eating eggs and versatile egg whites complement so many different ingredients that they are mixed with. Don’t think of egg whites as only a breakfast food; a delicious and nutritious egg white omelet is a light and satisfying meal for breakfast, lunch or dinner.
Simply spray your favorite skillet with nonstick spray and add any chopped veggies you want such as onions, green and red peppers, mushrooms and asparagus. Sautee the veggies until they’re soft and then pour three egg whites that have been mixed with salt and pepper to taste over the veggies. The egg whites will envelop the veggies and soon the egg mixture will begin to set around the edges. Lift the edges and tilt the skillet from side to side gently to let all the egg mixture cook through. Just before you’re done, sprinkle in a tablespoon of cheddar or Monterey Jack cheese and fold your omelet in half before serving.
