
Shrimp scampi is a simple and delicious way to prepare healthy and fresh ingredients in a flavorful dish. It is quick and easy to fix and is perfect year-round for you or to serve a dinner party full of people. Throw together this yummy and nutritious meal to spice up pasta night.
Ingredients:
- ½ pound peeled and deveined shrimp
- 1 serving of fresh or boxed angel hair pasta
- 1 small onion, diced
- 1 clove garlic, diced
- ½ cup cherry tomatoes, halved
- ¼ cup chicken broth
- 1/8 cup white wine
- 1 tablespoon olive oil, split in half
- Salt and pepper to taste
Preparation:
While the pasta is boiling per the instructions, cook the onion and garlic in half of the olive oil until translucent and set aside. Pour in the rest of the oil and cook the shrimp until pink, around 3-5 minutes. When shrimp is cooked, add the onion and garlic back in then add the tomatoes, salt and pepper to taste, chicken broth and white wine. Stir well then cover and simmer for about 3 minutes. Pour the shrimp and sauce over the cooked pasta and serve.

if you make it with whole-grain pasta, or better yet – use tofu pasta. u can get it from publix. that would make this dish actually very healthy!
